Olive Garden Chicken Gnocchi Soup Copy Cat

I like to find copy cat recipes.  It’s always nice to have a few of your favorite restaurant recipes lying around for a few reasons…

  1. You can not afford to go out to eat
  2. You want your favorite dish but no one else wants to go to that restaurant
  3. The restaurant stops making it (BUMMER!)

This is a copy cat recipe of Olive Garden’s Chicken Gnocchi Soup.  It is a creamy and hearty soup.  My husband really enjoys this recipe.  I hope you do too!

  • 1 pound chicken breasts, cooked and shredded
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 1 quart half and half or evaporated milk (whatever you have on hand)
  • 1 (14 oz) can chicken broth
  • 1/2 cup celery, sliced
  • 1/4 cup all-purpose flour
  • 2 garlic cloves, minced
  • 1 cup carrots, shredded or diced into small pieces
  • 1 medium onion, diced (about 1/2 cup)
  • 1 cup fresh spinach, coarsely chopped or 1/2 block frozen spinach, rinsed and drained
  • 1/2 teaspoon dried thyme
  • salt and pepper to taste
  • 16 oz package gnocchi


In a large stockpot, saute the onion, celery and garlic in the butter and olive oil.  When the onion is translucent, add the flour and make a roux (be sure not to scorch the flour).  Stir and cook a minute or two.  Add the half and half or evaporated milk.  Meanwhile, in a separate pot cook the gnocchi according to the package directions.  Add the carrots and chicken to the stockpot.  Stir often.  When the mixture is thickened, add the chicken broth, gnocchi, spinach and seasonings.  Cover and heat through.  Wala!  Delicious!
